With the mornings getting brighter and the evenings longer, an extra spring is our step here at Lishh!
For the past few weeks I have been testing out some old favourites from our menu, focusing on fresh, Cork produced ingredients in an effort to bring the classics back for all our foodies. The first splash of rhubarb is now poking its head up and a light and zesty rhubarb crumble was first up on the board. The key to the perfect crumble in my opinion is a light and crisp sweet pastry base, a perfectly stewed rhubarb compote and a generous crunchy crumble with some roasted nuts mixed through for the perfect texture sensation! As with most pastries, this goes nicely with a generous dollop of fresh Irish cream or a homemade creme anglais for a more decadent finish!

In this recipe Nigella uses porridge oats for her crumble. As with any recipe, use this as a starting point to cater for your own tastes and preferences. For example, I prefer a traditional biscuit crumble with some roasted chopped hazelnuts mixed through. A simple gluten free alternative for the crumble would also include a mixture of ground almonds, hazelnuts, Irish butter and brown sugar (with some cinnamon to taste)

Almost two weeks in our new shoes now and its been a blast so far!
Last Saturday saw our official launch with lots of fun, food, craic agus ceol thanks to our friends at Red FM! Was chuffed with the amount of support received – so many of our loyal customers showing up on the day to join with us in celebrating! We were also supported by a few of our friends from Cork GAA, Munster Rugby, along with family from near and far.
The support of my team – their hard work, loyalty and dedication in launching our catering in Cork expansion had really blown me away! I have never been more proud of a bunch of people! At this point I also have to give a shout out to Trish from Jacob’s On The Mall who has supported me throughout as well!
Tomorrow brings a close to another week and the pots are boiling and the ovens whizzing as we have a big day of outside event catering all over Cork suburbs so it will be a long day but a fun one!
Early to bed so I can have the breakfasts ready for the early risers in the morning!

SO we have our first day down in Dosco Business Park in our new premises in Cork and honestly it has been one of the toughest but one of the most enjoyable days of my career!
The kindness and encouragement from all our Cork Foodie Friends has been an inspiration and motivation-it humbles me to see all the support from our loyal customers who have continued on this journey with Lishh!! It was also great to see new faces pop in to check out the Lishh way and we look forward to becoming better acquainted!
Today would not have been possible without my wonderful staff-the backbone of Lishh so a big shout out to Shane, Aoife, Yarus, Emer, Jenny, Kathy and Kerry-Lee! A team I am truly proud of!
So with a tired body and a happy heart I am going to hit the hay looking forward to another day of catering to the people of Cork!
